Roast Chickens!

For New Years I cooked my first 'chinese-style' roast chicken. It worked out really well! I am all about roast chicken. Honestly, this is something that I never realized until I've been living downtown. Here are 4 reasons:
- DEAD EASY! You can go basic with simply 2 onions, 2 lemons, oil and rosemary. That's it!
- You can feed 4 people in one shot. How amazing is that? If you have less, you can have lots of great left overs for lunch: Chicken Fried Rice, Chicken salad sandwices, chicken breast sandwiches, grilled chiken salad.. the list goes on an on. Save money on eating out for lunch at work when you've got chicken!
- The carcus makes for a great chicken broth - we made 5 ziplock bags full of flavour rich broth that can be used to infuse rice, pasta, soups, congee etc. It's portioned to 2 cups per bag.
- A chicken costs only $10. Talk about bang for your buck!
